INGREDIENTS - SALAD

  • 1 2 Tbsps olive oil
  • 2 2 cloves Garlic minced
  • 3 1 cup Quinoa
  • 4 1 3/4 cups low sodium vegetable broth
  • 5 1 cup canned corn
  • 6 15 ounce can black beans
  • 7 1 red bell pepper chopped
  • 8 4 green onions sliced
  • 9 2 Tbsp minced fresh Cilantro

INGREDIENTS - VINAGRETTE

  • 1 3 Tbsp fresh lime juice
  • 2 2 Tbsp olive oil
  • 3 1 Tbsp honey
  • 4 1 tsp Chili powder
  • 5 1/2 tsp Cumin
  • 6 Salt and pepper to taste

DIRECTIONS

  • 1 Heat the olive oil in a pan over medium heat. Add the garlic and stir for a minute. Then add the quinoa, vegetable broth and bring the mix to a boil. Allow your mix to sit and boil for 15 minutes.
  • 2 As it cooks, you can make yourself the lime vinaigrette. Take a dressing jar and add all the ingredients as mentioned. You can whisk it or close the lid to give it a shake. In a quick, easy step, you have your sauce done!
  • 3 By this time the Quinoa broth is done too. You can now add corn, beans, bell peppers, and cilantro and green onions! Slightly add dressing as per your taste.
